
Pulled Pork is a Bartlo's Backyard family favorite. My husband has the slow smoking pork shoulder down to perfection with the scrumptious bark and meat that just melts away from the bone. A 7-pounder is more than enough to feed 7 people for dinner.

So, what to do with the leftovers? You can always freeze what you don't eat to save for a quick and easy pork tacos/nachos night. We do this often during the busy school year.
Today, I slapped an egg on it!! Reheated my pulled pork in a skillet to put on a bed of cheddar cheese atop an everything bagel thin. Let's face it. The bagel is just a vehicle for the good stuff. In that same skillet, I prepared 2 eggs over easy (to me, sunny side up is a partially raw egg but some like it) and covered the pulled pork. Then just poke the yolk enough for a grave that smothers it all. Yum!!
