Take for example empanadas with an over easy egg (or 2). These hand pockets of tasty goodness are a family favorite. I put a healthy spin on them by using ground turkey instead of ground beef and I bake them instead of frying. I use simple taco seasoning with a touch of red pepper flakes for just a bit of spice. Include some grated cheddar cheese for extra gooiness (that’s my word and I’m sticking to it). My kids LOVE them! My husband takes these leftovers for lunch because they are so easy to eat in between teaching high school classes.
What do I do with the leftover hand pies? SLAP AN EGG ON IT! The egg yolk breaks through the golden crust giving the filling a new, rich and skilky gravy. Give it a go and let me know.
