Armadillo Eggs with Furnace Mountain Red

These are bacon wrapped armadillo eggs paired with 8 Chains North’s Furnace Mountain Red, which I call Christmas in a glass.


These bacon-wrapped beauties are full of savory, sweet, and spicy flavors. Stuff jalapeño peppers with a mixture of cream cheese, shredded cheddar cheese, Worcestershire sauce, and garlic powder (mix together to taste; I don’t use measurements). When you hollow out

your peppers, keep in mind the more seeds and veins you leave the hotter they will be. Then completely cover your stuffed pepper in sausage. I use breakfast turkey sausage. Finally, wrap this all up in bacon. These were cooked over our Breeo firepit. The coals were nice and hot. I just kept turning the eggs occasionally to ensure they didn’t burn and were cooked through. At the very end, I brushed them with a spicy and sweet BBQ sauce. This process is tedious, but so worth it!

Now for the wine! I’ve been a member of 8 Chains North Winery in Loudoun County, VA, for about 6-7 years. The winery is small and personal. It’s relaxing. The Furnace Mountain Red is a favorite I purchase every year. It’s a full-bodied red which pairs so well with grilled meats, especially the char from the fire. With all the flavors in the armadillo egg, you need a wine that is just as bold. And while bold, it doesn’t kick you in the teeth. The Furnace Mountain Red has a velvety feel, an earthy warmth of spices, and a juicy back end of dark fruits. It lingers just long enough to not let you forget about it. It’s a blend of three estate-grown grapes – Merlot, Petite Verdot, and Cabernet Franc. I recommend decanting this for about 30 minutes for the perfect first sip. Then it just gets better from there.
